Bone-in Rib Steak

A perk to having the bone-in rib steak, which is a rib roast that is cut into portions of single rib steaks, is that the bone stores extra moisture and fat. The preserved moisture and fat in the area of the bone provides a rich and sweet flavor in bone-in rib steaks. Bone-in rib steaks are popular at restaurants because they are usually 1-2 servings of meat, whereas the rib roast can serve a family or two of people. The marbling of bone-in rib steaks vary depending on the section of the rib loin the meat came from. The percentage of fattiness in the bone-in rib steak affects the particular aroma and taste of the meat.
