Filet mignon is taken from a part of the cow located just past the ribs, along both sides of the spine. If sold whole, this piece is identified as “beef tenderloin”; however, if the short end of the meat is sectioned into smaller portions, the cuts are called filet mignon (which translates from French as “small, boneless meat”).
