NY Strip Roast

The NY strip roast is also known as top loin of beef. An average-size roast of this variety is approximately 4 to 5 pounds; but they can range as high as 8 pounds. Tender and juicy (and why wouldn’t it be? The NY strip roast comes from a section of the cow that doesn’t do a whole lot of work), the NY strip roast is characterized by its distinctive layer of fat along one side. The NY strip roast tastes best when the fat layer is trimmed to a quarter inch prior to roasting.

An eight-pound NY strip roast is an excellent choice for satisfying those hearty appetites on your guest list… and if there are any leftovers of this delicious meat, they’re ideal for steak sandwiches! A properly dry-aged NY strip roast is comparable to filet mignon in its tenderness, juiciness and succulent flavor… but without the steep price.
