Porterhouse Steaks

A porterhouse steak combines two classic beef-eaters’ favorites: NY strip and filet. This particular type or cut of beef is sometimes called a T-bone, although the common T-bone could refer to any such cut, whereas a porterhouse comes strictly from the rear portion of the tenderloin, which contains more filet than a common T-bone. The two sections of beef are separated by a T-shaped bone, which imparts moisture and flavor to the adjacent meat. Porterhouse is a popular choice in steakhouses, as this type of meat responds well to grilling or broiling and does not require the extended cooking time of those cuts that are best enjoyed slow roasted.
